Chia Seed Banana Bread with Cinnamon Dusted Almonds

Mix two cups gluten free flour (I chose brown rice flour) with two tbsp baking soda, two tbsp baking powder, one tbsp vanilla bean and a big pinch of Himalayan Sea Salt in a large bowl. 

In a separate bowl mash together three overripe bananas, half a cup of olive oil, half a cup of high quality maple syrup and a quarter cup coconut syrup. Add half a cup unsweetened almond milk and blend it all together. Make sure the dry ingredients are mixed well, then add the banana mash to the flour mix and blend until smooth. Place the batter aside and chop up two fistfuls or so of raw almonds and put in a small bowl. Add half a tbsp of flour and half a tbsp of cinnamon and blend together. 

Fold in five tbsp (or more!) of chia seeds into the batter and then add the cinnamon dusted almonds. Bake for 25 minutes or until golden brown (375 degrees!). Let the banana bread cool before serving, or it will crumble a bit like mine… Serve with a few slices if fresh pineapple or raw almond cream! Simple and delicious. #healthyeverydamnday
